Instructions: Dressing: Whisk together lemon juice, salt, pepper, olive oil, parsley and yogurt. Open up each pita pocket and spread with hummus on inside. Toss cucumber, lettuce and tomato in dressing. Place slices of turkey inside pita. Add cucumber, lettuce and tomato with dressing to fill pita.
