Ingredients:
Amount Ingredient
1 tbl Olive oil
1 x Clove garlic, crushed
4 x Turkey breast fillets
1 x Onion, chopped
1 x Red pepper, sliced
1 x 237 gram can chopped tomatoes, (8.1oz)
2 tbl Tomato puree
6 x Black olives, halved
Salt and freshly ground black pepper
Instructions:
Instructions: 1. Heat the oil and fry the garlic, turkey breasts and onion for 4-5 minutes, stirring occasionally.

2. Add the pepper, tomatoes, tomato puree, olives and seasoning and cook for a further 4-5 minutes. Transfer to a warmed serving plate and sprinkle with freshly chopped parsley.

NOTES : Delicious quick and easy supper, ideal served with crusty bread.
