The National Turkey Foundation, working with the U.S. Department of Agriculture, has revised roasting times for turkeys after noticing that todays turkeys dried out when cooked according to previous guidelines.

This is the revised chart, showing approximate times for roasting a turkey, unstuffed or stuffed, at 325 degrees. To be sure of doneness, use an instant-read meat thermometer. It should register 180 degrees in the thigh, 165 degrees in the stuffing. Juices should be clear, not pink.

8-12 pounds 2 3/4-3 hours 3-3 1/2 hours

12-14 pounds 3-3 3/4 hours 3 1/2-4 hours

14-18 pounds 3 3/4-4 1/4 hours 4-4 1/4 hours

18-20 pounds 4 1/4-4 1/2 hours 4 1/4-4 3/4 hours

20-24 pounds 4 1/2-5 hours 4 3/4-5 1/4 hours
