4 cup chicken broth
1 cup dried lentils rinsed
4 oz smoked turkey sausage cut into disks (low-fat kielbasa works great)
1 med onion chopped
2 x cloves garlic minced
1 cup chopped canned stewed tomatoes with juice
1 tbl Worcestershire sauce
1/4 tsp dried oregano
1/4 tsp ground black pepper
1/8 tsp ground cumin
1 med carrot sliced
1 stalk celery chopped
Instructions:
Instructions: Spray bottom of pot with nonstick cooking spray. Add onions, garlic and sausage. Cook over medium heat until sausage is browned, stir occasionally.

Stir in broth, lentils, tomatoes (with juice), Worcestershire sauce and spices. Bring to boil, then reduce heat. Cover and simmer for 15 minutes.

Add vegetables, increase heat, heat to boiling, reduce heat and cover.

Simmer for 20 minutes .

NOTES : Great for a filling meal on a cool fall or winter day.

I usually find the lowest fat Kielbasa and added a tad more to the recipe which still keeps the fat very low. Eating this with a nice fresh dark bread always satisfies my hunger for lunch or dinner.
