1/2 lb uncooked turkey breast, cut in 1/2" slices
1/2 tsp ground white pepper
1 cup all-purpose flour
1 tsp New Mexico red chile powder
1/4 cup olive or canola oil
2 x green onions, chopped (2 to 3)
1 x clove garlic, minced
1/4 cup Chile Vinegar, see recipe
2 tbl fresh lime juice
2 tbl chopped fresh cilantro

Instructions:
Instructions: Place the turkey slices between sheets of wax paper and pound until they are approximately 1/4 inch thick. Mix together the pepper, flour, and chile powder and dredge the turkey in the flour mixture.

Heat the oil and stir in the onion and garlic. Add the turkey and saute for 4 to 5 minutes on each side or until done. Remove to a warm platter.

Deglaze the pan with the Chile Vinegar and lime juice, stirring vigorously to loosen any of the particles that may have stuck to the pan.

Add the cilantro and cook over high heat for 2 to 3 minutes or until the mixture has thickened slightly Pour over the turkey and garnish with lime slices and sprigs of cilantro.

SERVING SUGGESTIONS: This is best accompanied by a fresh cranberry-orange sauce, mashed turnips, and/or steamed Brussels sprouts. Also good served with angel hair pasta with a fresh tomato and basil sauce.
