1/4 cup olive oil
1 x red onion, finely diced
2 x cloves garlic, minced
1 tsp minced hot pepper, such as Thai, cayenne or jalapeno
1 lb assorted mushrooms, such as cremini, portobello and shiitake, thinly
sliced
1/2 cup finely diced red bell pepper
1/2 cup heavy cream
1/2 cup chicken broth
3 cup diced cooked turkey
1 tsp salt, or to taste
1/2 cup chopped fresh cilantro leaves
3 lb sweet potatoes, cooked in their skins
4 tbl butter, melted
Grated zest and juice of 1 lime
Instructions:
Instructions: In a large skillet over medium heat, heat olive oil and saute onion, garlic and hot pepper until onion is translucent. Increase heat and add mushrooms and bell pepper. Cook until mushrooms have absorbed pan juices and are tender, 10 to 15 minutes. Shake pan from time to time to prevent sticking. Reduce heat and add cream, broth and turkey. Stir to combine and add salt. Remove from heat, add cilantro, and set aside.

Peel cooked sweet potatoes and put pulp in a bowl. Add melted butter, lime zest and juice, and salt, and mash together. Beat with a wooden spoon until light and fluffy.

Preheat oven to 375 degrees. Put turkey mixture in a 9-or 10 inch quiche or pie pan. Completely cover top of turkey with sweet potatoes, formed into attractive peaks. Bake until potatoes are browned, 30 to 40 minutes. Serve hot.
