Ingredients:

8 oz linguine cooked
12 oz cooked turkey breast cut into strips
1 jar dried tomatoes in oil - (8 oz) drained, and
coarsely chopped
1 cup fresh spinach leaves
Spinach Pesto (see below)
----------------- SPINACH PESTO ----------------
1 x garlic clove
1 cup fresh spinach leaves - (packed)
1/3 cup reduced-fat mayonnaise
Instructions:
Instructions: Toss together all ingredients. Serve immediately.

For Spinach Pesto: Process all ingredients in a food processor or blender until smooth. (

Makes about 3/4 cup)

This recipe yields 4 servings.

Comments: To speed preparation, we used deli-style turkey breast sliced 1/4 inch thick.
