1/2 cup cranberry sauce
2 x shallots, finely chopped
2 tbl balsamic vinegar
2 tbl fresh orange or
grapefruit juice
6 tbl extra-virgin
olive oil

2 x pink grapefruit
12 cup mixed salad greens
3 cup cooked turkey, diced
1 cup toasted walnut pieces
1/4 cup dried cranberries
Instructions:
Instructions: To make vinaigrette, combine cranberry sauce, shallots, vinegar and juice in food processor or a blender, and process until smooth. Slowly drizzle in oil, with motor running, until the oil is completely incorporated.

To make salad, peel grapefruit with a sharp knife, removing all pith. Cut grapefruit segment away from surrounding membranes. Combine greens and turkey in a large salad bowl. Add vinaigrette, and toss. Arrange grapefruit sections over tossed salad and sprinkle with walnuts and dried cran- berries. Serve immediately.
