Instructions: Do you still have some leftover turkey? Heres a recipe I modified by cutting down the butter and substituting evaporated skim milk for the whipping cream. My husband and I both loved it. (The recipe called for 2 tablespoons of sherry or white wine, but I forgot to put it in, and it was great-so call the wine optional.)
Cover rice with water in a saucepan and bring to a boil. Simmer for 20 minutes. Turn off heat and let sit for 10 minutes. Drain. Melt butter in a skillet. Add mushrooms and onion and saute over medium heat until lightly browned. In a large bowl combine rice, mushroom mixture and all remaining ingredients. Turn into 2-quart casserole dish. Cover and bake at 350 degrees for 1 hour, stirring occasionally. Remove cover and bake uncovered an additional 15 minutes. Email this Recipe:
