nonstick cooking spray
1/4 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped red pepper
1 x clove peeled, minced
1 lb cooked turkey without skin, cut into small pieces
3 cup water
1 x 14 1/2 ounce can fat-free chicken broth
2/3 cup wild rice rinsed and drained
1 x 4.5 ounce can diced green chile pepper
2 tsp chili powder
1 tsp ground cumin
2 cup frozen corn
Instructions:
Instructions: Spray a large saucepan or small Dutch oven with the nonstick cooking spray. Add the onion, green pepper, red pepper and garlic and cook over medium heat until tender, about 5 minutes. Add the turkey, water, chicken broth, wild rice, green chile pepper, chili powder and cumin. Bring to a boil and reduce the heat. Cover and simmer 30-45 minutes or until the wild rice is tender. Stir in the corn and beans and heat through.
