Ingredients:

1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp pepper
12 oz boneless, skinless turkey cutlets
1 tbl butter or margarine
2 lrg shallots, chopped, about 1/3 cup
2 x cloves garlic, minced
1/2 cup no-fat chicken broth, divided
6 tbl Madeira wine, divided
8 oz asparagus, cut into 2" pieces
6 oz mushrooms, sliced, about 1 cup
In bowl combine oregano, thyme, salt and pepper, sprinkle evenly over both
Instructions:
Instructions: Cutlets; set aside. In large nonstick skillet melt butter over medium heat.

Add shallots and garlic; cook stirring occasionally, until golden brown, 5-6 minutes. Increase heat to medium-high. Add turkey; slowly add 1/4 cup broth and 3 tablespoons wine. Cook turkey about 5 minutes per side. Add asparagus, mushrooms and remaining broth and wine. Cover; cook until asparagus is tender and turkey is cooked through, about 5 minutes.

Yield: 4 servings
