Ingredients:
Amount Ingredient
1 lb pork cut in strips (as per stir fry)
2 tbl peanut oil or other oil
1 x onion, diced
1 x cloves garlic, sliced
1 tsp hot paprika
1/2 cup vegetable stock or chicken stock/broth
1/2 cup peanut butter
2 can (15 oz. each) ready-to-eat Cuban-style black beans (e.g. black bean soup)
1 tbl cilantro, chopped small
2 tbl lime juice
Instructions:
Instructions: In a large skillet over moderate heat, heat the oil. When its hot, add the onion and garlic, cooking till the onion is a golden color.

Add the paprika, then the pork, cooking till the pork begins to brown.

Add the remaining ingredients, stirring well. When pork is cooked through and ingredients are well blended, its done. Freezes very nicely for cooking in advance for later use, as is the case with all the recipes in my new cookbook (hence the name).

Makes 4 servings.
