Instructions: To make udon noodles and clams: Prepare udon according to package directions; drain and reserve. In a separate steamer pot, add clams and sakes. Cover and steam until clams open.
To make sauce: In a saucepan, heat olive oil and butter. Add onion, garlic, ginger and pepper flakes. Saute for 2 minutes. Add regular sake and mirin and simmer 5 minutes. Add tomatoes, parsley and salt. Simmer another 5 minutes. Add cream; simmer 3 minutes. Add clam juice and simmer 3 more minutes. Toss sauce over noodles and garnish with steamed clams.
