4 tbl soft butter
1 cup pecan halves
1/2 cup brown sugar
1 tsp vanilla
1 tbl maple syrup
4 x tart apples cored - peeled and sliced
2 tbl white sugar
1/2 tbl lemon juice
1 tsp cinamon
1 tbl flour
1 tbl currants
Instructions:
Instructions: Spread 4 Tbs. soft butter on sides and bottom of non-stick 8" pie plate.

Press 1 cup of pecan halves, round side down, into butter. Mix 1/2 cup brown sugar, 1 tsp. vanilla extract, 1 Tbs. maple syrup. Pack mixture tightly on top of pecans. Cover with an 8" pie crust and press down. Mix 4 peeled, cored sliced tart apples with 2 Tbs. white sugar, 1/2 Tbs. Lemon Juice, 1 tsp. cinnamon, 1 Tbs. flour, 1 Tbs. currants and a dash of salt.

Spoon apple mix over dough. brush egg with beaten egg. Cover another 8" pie crust. Pinch edges to pleat dough. Cut 4 slits in top. Bake at 400F for 45 minutes. Cool 5 minutes and invert onto large plate and tap bottom.
