Instructions: Cream together the butter and sugar until light and fluffy. Beat in the eggs, vanilla, and lemon rind. Stir in the flour and drop the batter by teaspoonfuls (5 ml) onto a lightly greased and floured baking sheet, about 3 inches (7 cm) apart. Bake in batches in a preheated 375F (190C) oven until the edges are brown, about 7 minutes.
