8 x 2 or 3 oz veal escalopes
8 x thin slices of gruyere cheese
4 x thin slices of cooked ham
suggestion of garlic
seasonings
2 oz cooking oil
seasoned flouregg washfresh breaderumbs
----------------- Nutmeg butter: ----------------
4 oz butter
1/4 x a lemon
chopped parsley
----------------- Madeira sauce: ----------------
1/2 pt demiglace
Instructions:
Instructions: Beat escalopes and:press out until thin

Sandwich the ham slices between the cheese slices now sandwich this preparation between two prepared escalopes which have been rubbed with garlic and seasoned

Seal the edges of the veal by batting them together pass them through the flour egg wash and crumbs

Cock the escalopes in shallow oiI mixed with a knob of butter cook both sides to a golden brown colour cook gently

Place the cooked escalopes onto a serving dish cover them with chopped parsley and hot nutmeg butter Serve a hot sherry sauce. or madeira to accompany
