1 cup All-Purpose Flour Plus
2 tbl All-Purpose Flour
1 tsp Double-Acting Baking Powder
1/2 tsp Salt
2 x Eggs
1 lrg Potato
Scrubbed And Grated
2 x Carrots Grated
Instructions:
Instructions: In a large bowl, combine the flour, baking powder and salt. Add the eggs and 1 C water; stir until just blended (do not overmix). Stir in the potato, carrots and onion.

Spray a large nonstick skillet or griddle with nonstick cooking spray; heat. Pour the batter by 1/4 C measures into the skillet. Cook just until bubbles begin to appear at the edges of the pancakes, 3 - 4 min; turn over and cook 2 - 3 min longer. (It took us a little longer to cook these then the time stated.) Repeat with the remaining batter, making 12 pancakes.

This was fairly quick and very easy to put together.

Serving Provides: 2 Bread, 1 Fruit/Veg

NOTES : Decided to make something other then toast this morning so we made these. Very quick to put together by using your food processor to grate the potato and carrot. I had gotten some bagged frozen chopped onions so I used 3/4C of those to avoid having to grate the onion that early in the morning ((BG).
