Ingredients:
Amount Ingredient
2 x carrots, medium
1 x cucumber
1 x red capsicum
1 x green capsicum
4 stk celery
1/4 x cauliflower, medium
6 x onions, small
----------------- PICKLING LIQUID: ----------------
1 tbl sugar (caster)
2 cup white vinegar
1 cup white wine
2 x garlic cloves
1/2 tsp salt
12 x black peppercorns
Instructions:
Instructions: Peel onions.

Separate cauliflower into flowerets.

Cut vegetables into batons.

Combine all ingredients for pickling liquid in a pan, bring to the boil and cool.

Put a large pot of salted water on to boil. Blanch all vegetables except cucumber 2 minutes then remove from heat and drain well. Spread onto a tray and allow to cool slightly.

Pack vegetables into clean jars, pour over cold pickling liquid to cover and seal. Allow to stand 1 week before using.
