2 lb carrots peeled, sliced
1 lb potatoes peeled, diced
2 lb sweet potatoes peeled, diced
1 cup dried apricots chopped
1/4 cup honey
1/4 tsp cinnamon ground
1/4 tsp nutmeg ground
1 tsp brown sugar
1 tbl orange juice
2 tsp lemon peel grated
1 cup water
Instructions:
Instructions: Preheat oven to 350 degrees. In a large saucepan, cook carrots, white potatoes and sweet potatoes in boiling water until the vegetables are barely tender, about 10 minutes. Drain. In a large bowl, mix apricots, honey, cinnamon, nutmeg, brown sugar, orange juice, lemon peel, and 1 cup of water. Add vegetables and toss. Pour mixture into a shallow 3 quart baking dish. Dot the top with margerine or butter pieces. Bake for 30 minutes, uncovered. If the top is browning too quickly during baking, cover with foil.
