Ingredients:

2 tbl vegetable oil
1 x garlic clove minced
1/2 x red bell pepper seeded, and
sliced into 1/4" strips
1/2 x yellow bell pepper seeded, and
sliced into 1/4" strips
1 cup Chinese pea pods
1 cup sliced brown mushrooms
2 cup Alaska surimi seafood
1/2 cup green onions sliced
Salt to taste
Freshly-ground black pepper to taste
2 tbl sesame seeds toasted
Instructions:
Instructions: Place oil in skillet or wok, heat until very hot. Add garlic, stir-fry for 30 seconds. Add red and yellow pepper strips, pea pods and mushrooms. Stir-fry for 1 minute, and then add 2 tablespoons water, cover, and cook 2 minutes longer, stirring frequently until vegetables are tender-crisp.

Add surimi and green onions. Stir-fry 1 minute longer. Season to taste with salt and pepper. Sprinkle with sesame seeds and serve on hot cooked rice.

This recipe yields 4 servings.
