Instructions: In a large stockpot, heat the olive oil and add onions and garlic and carrots. Place over moderate heat, and let the vegetables sweat for about 10 minutes, stirring occasionally. Add the chicken broth and bring to a boil. Add the cauliflower, potatoes, tomatoes, corn, beans and bay leaves and spices. Simmer partially covered for 45 minutes.
Stirring occasionally. Add the rice or barley and simmer another 20 minutes. Taste and adjust seasonings and remove the bay leaves. I Have added chopped leeks, broccoli, parsnips . . . whatever vegetables you have. If the soup is too thick the next day just thin it down with some liquid . . . chicken broth, vegetable broth or water. Email this Recipe:
