1 head cauliflower cut into florets
3 lrg stalks broccoli cut into florets
3 lrg carrots peeled and sliced diagonally
1/2 lb mediterranean olives such as cracked green sicilian or kalamata olives
3 tbl fresh lemon juice
1/2 cup olive oil
4 x oil packed sun dried tomatoes chopped
1 tsp dried oregano
1/4 tsp dried crushed red pepper
salt & freshly ground black pepper to taste
Instructions:
Instructions: Steam cauliflower until just crisp tender - about 6 minutes. Rinse under cold water and drain well. Stream the broccoli until crisp tender - about 4 minutes, rinse under cold water and drain. Steam the carrots until crisp tender - about 4 minutes, rinse under cold water and drain. Combine vegetables and olives, cover and refrigerate for up to 1 day.

Combine the lemon juice, oil, tomatoes, oregano and pepper. Pour the dressing over the vegetables and stir to coat. Season with salt and freshly ground black pepper. Garnish with lemon wedges.

NOTES : The Vegetables Giardiniera are perhaps a little too acidic to match with a wine but were very tasty.
