Instructions: Steam cauliflower until just crisp tender - about 6 minutes. Rinse under cold water and drain well. Stream the broccoli until crisp tender - about 4 minutes, rinse under cold water and drain. Steam the carrots until crisp tender - about 4 minutes, rinse under cold water and drain. Combine vegetables and olives, cover and refrigerate for up to 1 day.
Combine the lemon juice, oil, tomatoes, oregano and pepper. Pour the dressing over the vegetables and stir to coat. Season with salt and freshly ground black pepper. Garnish with lemon wedges.
