8 x shallots peeled and chopped
10 x garlic cloves peeled and chopped
2 x inches kencur root peeled and chopped
12 x inches galangal (laos) peeled and thinly
sliced
4 x inches fresh turmeric peeled and sliced
2 tbl vegetable oil
1 x lemongrass stalk bruised
1 x salam leaves
6 lrg red chilies finely sliced
3 sm red chilies - (to 5)
1 tsp coriander seeds
1 tsp salt
1 tsp coriander seeds
1 tsp dried shrimp paste
Instructions:
Instructions: Put shallots, garlic,kencur, laos, turmeric, coriander seeds, chilies and dried shrimp paste into a food processor or use a mortar and grind coarsely.

Heat oil in a wok or a skillet and fry ground paste and remaining ingredients, saute for 2 minutes or until the paste changes to a golden color. Cool before using.

This recipe yields 1 cup.

Comments: This basic paste can be stored in a refrigerator for up to a week. However, it is always better to have pastes fresh before preparing a dish.
