1/4 cup beer
1/3 cup sifted all-purpose flour
2 tbl grated Parmesan cheese
1 tbl snipped parsley
1 tsp salt
Dash garlic powder
1 tbl olive oil
2 x beaten egg yolks
2 x stiff beaten egg whites
1 x (9 oz.) package frozen artichoke hearts, cooked and drained
1 med zucchini, sliced
1 sm cauliflower, broken into buds
1 x green pepper, cut into strips
Instructions:
Instructions: Mushrooms, okra and other vegetables may also be used Let beer stand at room temperature 45 minutes or until flat. In mixing bowl, combine flour, cheese, parsley, salt and garlic powder. Stir in olive oil, egg yolks, and the flat beer; beat til smooth. Fold in stiff beaten egg whites. Dip vegetables in batter. Fry in deep hot fat (375 degrees), a few at a time, til golden, 2 to 5 minutes. Drain on paper towels, serve immediately.

Makes 3 cups
