Instructions: Prepare the vegetables.
Cut to an even size not too large. Any hard or older vegetables e.g. carrots and broccoli should be blanched in boiling water for 1 to 2 minutes to help the cooking. Heat the oil in a large saucepan. Add the garlic sherry salt pepper and sugar and stir. While stirring add the vegetables. Cover and cook for 1 to 2 minutes. Drain and place on a serving dish. Pour the oyster sauce over the vegetables. A variety of vegetables can be used for this dish. Have a mix of colours and textures the vegetables are only briefly cooked so they remain bright and the texture crunchy. If you prefer slightly less crunchy vegetables cook for 2 to 3 minutes longer.
