Amount Ingredient
1/4 cup chopped onion
2 x green onions with tops chopped
1/2 tsp olive oil
salt and pepper
1/8 tsp Western Spice Blend or double to taste
OR mild chile powder blend
16 oz vegetarian baked beans with tomato sauce molasses-free
8 oz water
2 tbl apricot pumpkin butter level or heaping
OR apple butter
Instructions:
Instructions: Heat pan; add oil and onions. Season with salt and pepper and saute until soft. Add spice blend; stir to coat onions. Add the beans, water, and pumpkin butter. Stir to combine. Heat until almost bubbling. Cover; reduce heat to lowest and simmer until needed (30 to 60 minutes). Serve with a splash of malt vinegar.

Serving Ideas : Munster cheese on a spicy bean burger; whole-wheat bun with coleslaw.

NOTES : Turn an ordinary can of baked beans into a sweet-sour side dish.
