olive oil-flavored couscous - (7 oz)
1 can red kidney beans - (15 oz) rinsed, drained
1 x cucumber thinly sliced
1 cup halved cherry tomatoes
1/2 cup crumbled plain or
herb-flavored feta cheese
Instructions:
Instructions: Cook couscous according to package directions.

Add kidney beans to the hot couscous; mix well.

To serve, mound the couscous in a large bowl, encircle with cucumber slices and cherry tomato halves, and top with crumbled feta then parsley.

This recipe yields 4 servings.
