Instructions: Combine oil, thyme, salt, and pepper in a very large bowl or 2 gallon resealable bag.
Add vegetables, toss to coat. Marinate 30 minutes. Thread vegetables on 6 metal skewers. Grill over medium heat 15 minutes, turning occasionally, until vegetables are crisp-tender and have grill marks. This recipe yields 6 servings.
