Instructions: Prepare rice as directed on package; set aside. Spray large nonstick skillet with cooking spray. Heat over medium heat until hot. Add zucchini and onions; cook until softened, 3 to 5 minutes, stirring occasionally. Stir in cooked rice and remaining ingredients. Cover; simmer over low heat 5 to 10 minutes to blend flavors. 6 - 1/2 cup servings.
