Ingredients:
Amount Ingredient
1/2 cup sauteed onions and green peppers
6 oz sweet Italian sausage casings removed,
chopped and cooked - (1 1/4 cups)
1 cup canned black beans rinsed
1/4 cup Tabasco brand Pepper Sauce
12 x eggs beaten
1/2 cup hash browns
1 cup grated Monterey Jack cheese
Instructions:
Instructions: Combine and heat the sauteed onions, peppers, sausage, black beans and the Tabasco brand Pepper Sauce. Hold warm.

For each serving, ladle ounces of the egg into a preheated nonstick omelette pan and cook omelette-style until the egg sets.

Top the omelette with 1/2 ounce of hash browns, 1 1/2 ounces of the sausage mixture, and 1/2 ounce of the cheese. Fold the omelette in half, then into quarters and place on a biscuit.

This recipe yields 12 servings.
