Instructions: Bake cake in a 9 x 12-inch oblong cake pan. Cool. Beat cream cheese and 1/2 cup of milk until smooth. Mix pudding and 2 1/2 cups milk until smooth. Beat together pudding and cream cheese mixture. Drain pineapple and spread on top of cake. Top with pudding mixture. Top with Cool Whip; sprinkle with coconut. Chill, then serve.
