Using two large eggs in their shells as weights weigh equal quantities of each ingredient: approx 1 Cream together margarine and sugar until light and fluffy 2 Beat in eggs one at a time 3 Fold in sieved flour and salt 4 Divide mixture between two 6 1/2in (165mm) or one 8 1/2in (200 mm) greased sandwich tins 5 Bake in preheated oven until golden brown 6 When cooked remove from tins allow to cool on rack and then sandwich together with desired filling such as jam or butter icing Variations: approx 1 Replace loz (28g) flour with loz (28g) cocoa 2 Add the grated rind of 1/ lemon or orange 3 Add 2tsp instant coffee dissolved in 1tbsp hot water servings: 68 portions small oven: 180 degrees C approx 20 minutes PREHEATED middle shelf fan oven: 170 degrees 20-25 minutes PREHEATED Email this Recipe:
