Instructions: For The Marinade:
Mix soy Sauce, garlic, sugar, sherry and hoisin sauce in a small bowl. For The Salad: Rinse the chicken and pat dry. Place in a shallow dish. Add the soy sauce mixture, turning to coat. Marinate, covered, in the refrigerator for 24 hours, turning occasionally. Drain, discarding the marinade. Grill the chicken over hot coals until cooked through. Let stand Until cool. Cut into strips. Toss with the lettuce, 2 bunches green onions, cilantro, peanuts and sesame seeds in a large bowl. For The Dressing: Whisk the sesame oil and vinegar in a small bowl until combined. Add soy sauce, sugar, red pepper, garlic and green onions, mix well. Pour over the salad, tossing to coat. Note: This is one of my favorite salads. Its so fresh and the marinated grilled chicken is nothing short of addictive. Marinated grilled pork tenderloin may be substituted for chicken. Email this Recipe:
