2 tbl vegetable oil
2 med onions, chopped
2 med tomatoes, chopped
1 cup converted rice
2 cup cooked chicken, chopped
1/2 lb fresh lump crabmeat, OR
1 can drained crabmeat, (6-oz.)
1 x clove garlic, minced
1 tsp curry powder
1/4 cup chicken broth
Instructions:
Instructions: In a large frying pan, heat oil over medium heat. Add onion and garlic.

Cook until the onion is soft (about 3 minutes). Add tomatoes, curry powder, and rice. Mix well and cook for 2 minutes. Stir in broth and bring to a boil. Reduce heat to moderately low and cover. Cook for 20 minutes until liquid is absorbed and rice is tender. Add chopped chicken and crabmeat. Cook for 5-10 minutes, stirring occasionally, until heated through. Remove to a serving platter and top with cashews.
