Instructions: This is usually paler and more yellow in color. It is made from the second and subsequent pressings and is lighter in flavor than extra virgin oil. Use it in light salad dressings and mayonnaise. Other vegetable oils just do not have the same flavor and it is always worth investing in a good olive oil. It should be kept in a cool place but not the refrigerator as it will solidify at low temperatures. It is affected adversely by light and is better stored in cans or dark glass bottles rather than clear ones. The oil container should always be sealed or stoppered as the olive oil will turn rancid if it is kept in an open container for too long.
