Instructions: Boil pasta according to directions on box (al dente), using salt and olive oil.
Heat butter and olive oil in a small saucepan. Add sun dried tomatoes, saute for a few minutes. Add vodka and let evaporate. Add diced tomatoes and bring to a boil. Reduce heat, cover, simmer about ten minutes. Add heavy cream, bring to a boil, then remove from heat. Drain pasta, reserve one cup of its cooking liquid, rinse. Put pasta in a serving dish, add sauce and Parmesan cheese. Mix well, if pasta looks dry, add a little of the pasta water. Top with more Parmesan cheese if desired.
