Instructions: Combine the fruits in a bowl and sprinkle with the sugar.
Allow to macerate for 15 minutes before adding the remaining ingredients. Take a chauffeur with you to alleviate any drink/driving problems you may incur with this dish. Chargrilled salmon tabbouleh 40z burghul (cracked wheat) Sea salt and ground black pepper 1 lb fillet of salmon skin removed juice of 1 lemon 4 fl oz extra virgin olive oil 1 bunch flat leaf parsley chopped 3 tbsp chopped mint 1 bunch spring onions sliced 2 plum tomatoes seeded and diced Soak the burghul in cold water for 10 minutes drain and squeeze dry. Season with salt and pepper. Meanwhile grill or chargrill the salmon for three minutes each side. Allow to cool then flake into small pieces. Add the lemon juice and oil to the burghul. Allow to sit for 20 minutes before folding in the remaining ingredients including the salmon. Email this Recipe:
