Prepare macaroni as label directs, using 1 teaspoon salt in water; drain. Meanwhile, coarsely chop walnuts. In small saucepan over medium heat, toast walnuts until lightly browned. Cut apple into 1-inch pieces. Thinly slice celery. Cut cheese into bite-size pieces. In large bowl, mix olive or salad oil, lemon juice, sugar, poppy seeds, mustard and 1/4 teaspoon salt. Add macaroni, apple, celery, cheese and raisins. Line 2 dinner plates with lettuce leaves; spoon macaroni mixture on lettuce; sprinkle with walnuts. If you like, serve with bagel chips or crackers.
