1/2 cup All-purpose flour
2 tbl Sugar
1 tsp Baking powder
3/4 tsp Baking soda
1/2 tsp Salt
1/2 cup Finely-ground walnuts
1/2 cup Buttermilk
1 lrg Egg
1/4 cup Butter melted and cooled
2 tbl Butter
3 lrg Cooking apples cored, and
sliced into rings
3 tbl Sugar
Instructions:
Instructions: In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and walnuts. Whisk together the buttermilk and egg. Stir the buttermilk mixture into the dry ingredients until just combined; stir in the melted butter. Heat a lightly greased skillet or griddle and ladle on pancake batter to form 20 to 3-inch cakes. Cook over medium-high heat until small bubbles form and the edges begin to brown, 2 to 3 minutes. Turn and cook for 1 to 2 minutes longer, until just cooked through. Keep pancakes warm and repeat until 12 cakes have been made.

Melt the 2 tablespoons butter in a large saute pan. Add the apple rings and cook over medium heat for 1 minute. Combine the sugar and cinnamon and sprinkle onto apples. Turn apples and cook on the other side for 1 minute. Top pancakes with sauteed apples and serve warm.

This recipe yields 6 servings.
