750 ml ruby port
125 gm caster siigar
12 x vairilla pods split lengthways
twist of pepper
strip of lemon zest
25 gm each of blackberries blueberries raspberries blackcurrants and redcurrants or cherries all picked over and topped and tailed where neccessary.
6 slc panettope
Instructions:
Instructions: Put the Port sugar vanilla pods pepper and lemon zest in a saucepan. Bring to the boil and reduce by half.

Add the fruit and cook gently for 5 minutes.

You dont want them to collapse just to warm through.

Remove the vanilla pods and lemon zest.

Toast the panettone and place on 6 plates.

Spoon over the fruit niixture and garnish with a generous dollop of cream.

Put the rest of the cream on the table.

Panettone arrives in the shops shortly before Christmas and this is a great way to use any that is left over.
