8 oz plain flour
1/2 tsp of baking powder
1 tsp ground mixed spice
2 oz ground almonds
6 oz sugar
1 x egg
1/2 pt buttermilk
2 oz melted butter
8 oz Blueberries
Instructions:
Instructions: Plus a 12-hole muffin tin, and paper muffin cases.

1. Sift the flour, baking powder and mixed spice into a bowl and stir in the ground almonds and sugar. Put the egg, butter milk and melted butter into a second bowl and beat well. Stir into the dry ingredients to make a smoother batter.

2. Fold in the Heritage Coast Blueberries, then spoon the mixture into 10 of the muffin cases in the muffin tray until three-quarters full. Scatter with the chopped almonds and bake in a pre-heated oven at 200 C/400F or Gas 6 for about 18-20 minutes until risen and golden. Remove from the oven, allow to cool on a wire rack and serve warm.
