1/2 tbl Extra virgin olive oil
4 sm Pickling cucumbers, peeled, seeded, cut into 1/4-inch dice, about 1
1/2 x Glazed Spiced Pecans
1/3 cup Seasoned rice vinegar
2 tbl Poaching liquid, see recipe
1/4 tsp Salt
Freshly ground pepper
Instructions:
Instructions: Preparation Time: 10 minutes

Cooking Time: 1 minute

Yield: 4 servings

1. Put oil, cucumbers, seasoned rice vinegar, poaching liquid, salt and pepper in small skillet over medium-high heat. Cook until just warmed through, about 1 minute. Remove from heat, add cilantro and adjust seasoning.
