1 x Kangaroo Loin
1 x Seaweed Sheets
----------------- Marinade Sauce: ----------------
Miren Wine
Soya Sauce
Sancho Pepper
Wasabi Powder
----------------- Salad: ----------------
80 gm Soba Noodles
1 tbl Pickled Ginger
Squeeze of Lime
1 tbl oil
Chopped Chives
1 tsp Cucumber
Instructions:
Instructions: 1. Make mainade to taste, depending on your desire.

2. Roll Loin through marinade, leave for 10 min to 2 hours.

Put aside.

3. In clean bowl, mix cooked Soba noodles, squeeze of lime and all other ingredients. Chill.

4. Remove Kangaroo from marinade in hot oiled pan searing well, cook to your liking (recommend not past medium).

5. Remove and rest for 4-5 minutes.

6. Reduce remaining marinade in pan until starts to thicken.

7. Taking cooked loin, roll in Seaweed sheet tight.

To Serve:
1. On large white plate, place Soba noodle salad in centre in rectangular shape.

2. Slice Loin into 3mm pieces and overlap down salad. Sauce with your marinade reduction - a little on each side.

3. Place chopsticks on side, garnish with Chive batons.

Serve and enjoy your Kangaroo!
