Instructions: Note: Since the shrimp will cook very quickly, be sure to have all the ingredients washed and ready beforehand.
In a large skillet, heat 1/4 cup of the oil over medium-high heat. Add the garlic, and cook, stirring, until golden, about 2 minutes. Add the shrimp, stirring until just cooked through. Add beans, basil, lemon juice, remaining 1/4 cup olive oil, and salt and pepper to taste; toss to heat through. Place arugula on a platter. Spoon the shrimp mixture on top; include all the pan juices. Season with additional salt and pepper. Serve immediately. This recipe yields 4 to 8 servings. Email this Recipe:
