Instructions: In a large pot of boiling salted water, blanch watercress 10 seconds. Drain and plunge into ice water to stop the cooking. Drain again and squeeze dry in clean kitchen towels.
Stir creme fraiche or sour cream and green onions into mayonnaise. Fold in watercress; chill thoroughly. Just before serving, season with salt and pepper, adding lemon juice, if desired. Email this Recipe:
