Serve this sensational dip with an assortment of crudites, such as baby
carrots, edible-pod peas, celery sticks, Belgian endive, sliced jicama, fresh
mushrooms, broccoli or cauliflower florets.
2 lrg bunches watercress, stems removed
3 tbl creme fraiche or sour cream
2 x green onions, minced
2 cup mayonnaise
Salt and freshly ground pepper, to taste
Instructions:
Instructions: In a large pot of boiling salted water, blanch watercress 10 seconds. Drain and plunge into ice water to stop the cooking. Drain again and squeeze dry in clean kitchen towels.

Stir creme fraiche or sour cream and green onions into mayonnaise. Fold in watercress; chill thoroughly. Just before serving, season with salt and pepper, adding lemon juice, if desired.
