Instructions: Preheat oven to 400 degrees. Stabilize the watermelon by cutting a 1/4 inch slice off the bottom rind horizontally. cut the top third of the watermelon off horizontally, then scoop out enough of the pulp and seeds from both top and bottom to fit the chicken.
Prick the lime with a fork and place inside the chicken. Also sprinkle the cavity with 1 tablespoon cilantro and some salt and pepper.
Sprinkle the rest of the cilantro and all of the jerk seasoning powder on the outside of the chicken. Place the chicken in the melon, put on the top, and secure it closed with skewers. Bake 2 hours. Reduce the temperature to 300 degrees and cook 2 1/2 more hours.
Heat watermelon juice until thickened. Add cream of coconut and spoon over the chicken pieces.
Serve with rice and pieces of watermelon.
Serving: To serve, show the whole thing to guests (or else whats the point?) before removing the chicken and ladling the watermelon juice into a saucepan.
