Instructions: Melt the dripping in a frying pan. When hot add the garlic onion and thyme and cook over a medium heat until the onion is soft and just starting to brown. Increase the heat and add the meat and potato. Cook until the potato and meat start to crisp. Add greens and stir fry until wilted. Pour in the gravy or wine increase the heat and cook until the liquid has all but evapourated. Season to taste and serve immediatley.
