Instructions: Coarsly grate cheese.

Melt butter in a small saucepan, add flour and cook gently 1 minute. Add milk and beer and stir until sauce thickens and is smooth . Add cheese, worcestershire, mustard, salt and cayenne. Stir constantly until the cheese melts. Remove pan from heat and stir in lightly beaten egg.

Toast bread on one side, spread other side with cheese mixture and grill until golden. Serve hot sprinkled with paprika.
