Instructions: Heat the grill to is highest setting for 10 minutes before the potatoes are ready.
Combine all the filling ingredients together in a bowl. Then when the potatoes are ready cut them in half lengthways and make some criss cross slits in them being careful not to cut through the skins and using a cloth to protect your hands. Then divide the topping mixture between the potatoes place them on the grill pan and grill 50m from the heat for 3 to 4 minutes until the cheese has puffed up and turned golden brown oh top. Makes a lovely lunch dish served with a salad. You can make your own relish for this (qv red onion tomato and chilli relish) or you could buy it readymade. Serves 2 Email this Recipe:
