Instructions: Combine soy sauce, oil, sugar, lime peel and juice, cayenne, and ginger with 2 tablespoons of water. Stir until sugar is dissolved and pour over filets in large plastic storage bag. Press air out of bag and close securely. Turn bag over several times to coat fish well. Refrigerate 2 to 4 hours, turning often. Preheat oven to 350-375 degrees. Remove from marinade and place in shallow baking pan. Bake 10-15 minutes or until fish flakes easily with fork. Sprinkle with almonds last 5 minutes of cooking time. For a special treat, grill over mesquite coals.
